Pasta Bar Catering in Middle Tennessee

We bring the pasta bar to your event and cook it there. The trailer pulls onto your site, the cavatappi is cooked on the spot, and it goes out under our house-made four-cheese sauce. The pulled pork and chicken are slow-roasted in the truck with our house spice blend. Our staff serve the line and top each plate as it passes, so it keeps moving.

How the pasta bar works

The pasta bar is our Loaded Bar, served on pasta. Ahead of time you pick three proteins, two toppings and three sauces. On the day the pasta goes out in bulk, guests walk the line, and our staff build each plate to order as it reaches them.

It serves up to 400 guests.

If you would rather guests order their own bowl, Loaded Stations runs the same food from serving stations inside your venue, for up to 300. The three formats are compared on our catering page.

What goes on it

Our menu is built on a base of pasta. The proteins are chicken thigh meat, pulled pork, sliced brisket and pork belly. Toppings run from applewood bacon and bleu cheese crumbles to red onions, jalapeños, pickle chips and cole slaw. The sauces include tangy barbecue, buffalo and ranch, on top of the four-cheese.

Put together, that gets you bowls like the Buffalo Chicken, with bleu cheese crumbles and jalapeños, or the Pulled Pork BBQ, with cole slaw and pickle chips. The full list is on our menu.

If it can go on pasta, we can do it. Tell us what you are picturing and we will tell you how we would build it.

An Italian pasta bar

The same setup runs Italian. There are two red sauces, one with meat and one without, and a white sauce. Individual or family-style salads go alongside. The sauces can be mixed, so a plate can have the four-cheese and a red or white sauce together. We build the rest of an Italian menu with you, around your guests and your event.

Pasta, potatoes or both

Every item on our menu comes as a Loaded Pasta Bowl or a Loaded Baked Potato, and the bar can serve both side by side. If you go with both, we ask for a rough pasta-versus-potato split about two weeks out. An estimate is fine. There is more on the potato side in what a loaded potato bar is.

A pasta bar at a wedding

While dinner may be a focal point of a wedding, there’s almost always a party to follow. That’s why we are set up to serve quickly. Although we can customize each guest’s plate, our lines go just as fast as any normal buffet. When you submit an inquiry, we’ll be able to give you an estimate of how long it will take to serve your guests.

We are self contained for catering, so there’s no need for an on-site kitchen. Our catering page has more info about catering a venue with no kitchen.

Where we cater

We cater across Middle Tennessee, North Alabama and North Georgia, bounded by Nashville to the north, Huntsville to the west, Dalton, Georgia to the south and Cookeville to the northeast. More on sizing an order is in how many guests we can serve, and on budgeting in what food truck catering costs.

Ask for a quote

Tell us the date, the town, roughly how many guests, and the pasta bar you have in mind. That is enough for a real answer instead of a range. Whether a twenty-guest event works comes down to where the truck already is that day. It is always worth asking.

We use this to answer you and nothing else. No list, no newsletter. If a guest has a serious allergy, call 931-271-7455 instead, because that answer depends on which allergy and which dish.
